For my Week 1 update I wrote out what my diet looked like. You probably seen Cheri's Lentils and Rice listed A BUNCH and that is because its a great meal that you can cook up ahead of time, throw in the fridge, and eat on the go throughout the week. Its super great for heart health, they are a great source of iron, they help stabilize blood sugar, and so much more! I got this recipe from my sweet cousin, Cheri (hence the recipe name); who has been such a great support to me on my personal journey. I'm so thankful she shared it with me and that she has now given me the opportunity to share it with YOU!
